Bread from the wood fired oven is a traditional food made from a dough, consisting of ground grain (flour), water, a leavening agent and mostly other ingredients. It is one of the basic foods. The firm, dark outside of the bread is called “Kruste” or “Rinde”. The inside is the “Krume”. Bread crumbs are also called “Brosamen”(from Middle High German) or “Brösel”. Most bread doughs can also be baked in the form of smaller, about palm-sized portions as bread rolls.
